Ingredients:
- 1 cup rice (basmati or jasmine recommended)
- 2 cups chicken broth
- 2 chicken breasts (cut into bite-sized pieces)
- 1 onion (chopped)
- 2 cloves garlic (minced)
- 1/2 cup peas or vegetables (optional)
- 1 tsp turmeric or paprika
- Salt & pepper to taste
- Olive oil or butter
Instructions:
- Prepare Chicken: Season chicken pieces with salt, pepper, and spices of choice (paprika or turmeric). Sauté in a pan until browned. Set aside.
- Cook Vegetables: In the same pan, add onion and garlic, cooking until soft.
- Cook Rice: Add uncooked rice to the pan and stir to coat with the flavorful oils. Pour in chicken broth and bring to a boil.
- Combine: Return chicken to the pan, cover, and simmer for 15-20 minutes or until rice is tender and liquid is absorbed.
- Serve: Fluff rice with a fork, garnish with fresh parsley or lemon, and enjoy!
