Ingredients:

  • 1 cup rice (basmati or jasmine recommended)
  • 2 cups chicken broth
  • 2 chicken breasts (cut into bite-sized pieces)
  • 1 onion (chopped)
  • 2 cloves garlic (minced)
  • 1/2 cup peas or vegetables (optional)
  • 1 tsp turmeric or paprika
  • Salt & pepper to taste
  • Olive oil or butter

Instructions:

  1. Prepare Chicken: Season chicken pieces with salt, pepper, and spices of choice (paprika or turmeric). Sauté in a pan until browned. Set aside.
  2. Cook Vegetables: In the same pan, add onion and garlic, cooking until soft.
  3. Cook Rice: Add uncooked rice to the pan and stir to coat with the flavorful oils. Pour in chicken broth and bring to a boil.
  4. Combine: Return chicken to the pan, cover, and simmer for 15-20 minutes or until rice is tender and liquid is absorbed.
  5. Serve: Fluff rice with a fork, garnish with fresh parsley or lemon, and enjoy!
